Microwave Popcorn

Popcorn is a healthy, low calorie, high fiber snack, but I hate popcorn in a bag. It’s high in sodium and expensive for those little 100 calorie bags. I found a great microwave popcorn popper online. I buy big bags of popcorn for $2.00, and get tons of popcorn. The popper cost $5.00 plus shipping.

A co-worker, who is also a Weight Watchers fan, sprays her popcorn with all-natural, butter flavored cooking spray and lightly seasons it with salt. This is now my favorite – I’m starving, but have no points left – snack!

Just Google it, and you’ll find many options to purchase online.

Mexican Pinwheels

I made this appetizer for a holiday years ago. It’s become one of my son’s favorite appetizers. It’s colorful, and easy to make.

This recipe makes 30 appetizers

Ingredients

8 oz light cream cheese
1 package taco seasoning
3 T diced green chile, finely chopped
3 T pimientos, finely chopped
4 oz black olives, finely chopped
3 green onions, finely chopped
5 low fat flour tortillas

Mix all ingredients together and spread evenly over tortillas. Roll tortillas up jelly-roll style, wrap in plastic wrap and refrigerate for 2 hours. Slice into 1″ slices.

Chicken Skewers With Peanut Sauce

This makes a great appetizer. My sister-in-law couldn’t keep away from the remaining sauce, even after the chicken was gone! This recipe is from Women’s World magazine.

Serves 4

Ingredients

¼    cup    Barbecue Sauce
¼    cup    Creamy Peanut Butter
¼    cup    Light Soy Sauce
¼    cup    Cilantro — chopped
2    tbsp    Dijon Mustard
1    lbs    Boneless Skinless Chicken Breast — cut in 12 strips

Instructions

Combine all ingredients except chicken. This mixture can be a bit thick and can be thinned down with water.

Place 1/2 the mixture in a bag and marinate chicken for thirty minutes and refrigerate the remaining marinade to use as a dipping sauce.

Thread chicken on skewers and grill until cooked through. If you are using bamboo skewers be sure to soak well prior to grilling.

Serve with dipping sauce.
