Mother Rimmy's Chipotle Tequila-Lime Chicken Salad

So today I had a very ripe avocado that was probably heading for the compost bin. It wasn’t firm enough for a salad, and I didn’t want to make the usual guacamole with it. As I was daydreaming about what I could do with this avocado, I was inspired to make a chicken salad. Yep, chicken again!

What if I took my very mushy avocado and made a dressing out of it. Then I marinaded chicken breasts in tequila, lime and my favorite chipotle peppers in adobo sauce. Combined all of this with some really great salad ingredients. Topped the salad with whole grain tortilla strips. Hmmmmm.

My salad turned out to be a colorful, low fat, high fiber, loaded with nutritious ingredients, meal. The easy dressing really makes this dish. I’m sorry my picture didn’t give the dressing justice, but today was a long day at work, so my picture taking skills could use some work. 🙂

Serves 2

2 ea chicken breast halves
¼ cup tequila
½ ea lime
1 tablespoon chipotle peppers in adobo sauce, minced
1 ea fat free flour tortillas
1 tsp chili seasoning
½ cup fat free ranch dressing
½ large avocado
½ ea lime
dash hot sauce
½ cup frozen corn kernels
½ cup bell pepper, chopped
½ cup black beans
½ cup onion, chopped
½ cup roma tomato, chopped

Chicken – Marinade chicken for a minimum of 30 minutes in tequila, lime and chipotle peppers.

Dressing – Using blender combine Ranch dressing, avocado, 1/2 lime juiced and hot sauce to taste.

Tortilla Strips – Slice with knife into strips, spray with cooking spray. Sprinkle with chili seasoning and bake at 350 in oven until crisp for 15 minutes.

Salad – Top romaine with onion, pepper, corn, black beans, Roma tomato, sliced chicken and tortilla chips.

Serve with dressing.
