Baked Potato with Rosemary, Mushroom Sauce

Potatoes get a bad rap as far as I’m concerned. They provide nutrients such as Potassium, B vitamins and fiber. They taste wonderful and satisfy that carb craving. I can’t think of anyone that doesn’t like potato.

The problem comes in the ways they are cooked and fried (french fries being my favorite treat). You really can make great potato dishes that are healthy and nutritous.

I found this recipe on http://www.whfoods.org. I made this baked potato for my husband with a side salad. He never missed the meat. The mushroom sauce is hearty and savory. Add a side salad, or steamed veggies on the side and you have a really satisfying, low-calorie meal.

Serves 4

4 medium baking potatoes
½ medium onion, diced
4 cloves garlic, minced
2 cups crimini mushrooms, sliced
1 cup hot water
1 tbsp tomato paste
1 tsp dried vegetable stock
1 tbsp rosemary, fresh minced
2 oz. goat cheese

Microwave potatoes until tender.

Spray pan and healthy saute onions over medium low heat for five minutes, add garlic and saute another minute.

Add mushrooms and saute another minute, then add tomato paste, water, dry vegetable stock and rosemary. Simmer another 10 minutes and season with salt and pepper.

Split potatoes and top with mushroom sauce and goat cheese.
