One of my favorite tips is to use low calorie or fat free bottled salad dressings to
marinade meats and vegetables prior to cooking. Since they are being used as a marinade, I can buy the cheaper brands and not sacrifice flavor.
I love to use Asian and Italian dressings with chicken, pork and beef. I put the meat in a zip lock bag before I leave for work. When it’s time to make dinner I have tenderized, seasoned meat to grill, roast or fry.
Grilled vegetables benefit from these dressings as well. I’ll toss veggies with Italian dressing, and add chopped garlic and a pinch of red pepper for kick. Top with a little Parmesan cheese. Toss with some whole wheat noodles and you have a meat free meal. Yum.
How about a quick stir-fry using your favorite Asian dressing with a bit of cornstarch to thicken? Add the chicken or pork you’ve been marinading, and you have a wonderful, easy stir-fry.
