Winter Greens with Balsamic Vinaigrette

Winter GreensI loved this light salad. The dressing is creamy and low in fat and calories. I added 2 tbs grated parmesan and used mixed leafy greens from Costco. It was the perfect side salad for the Potato Crust Quiche.

Recipe adapted from Weight Watchers

4 Servings

3 tbs nonfat yogurt

4 tsp balsamic vinegar

2 tsp olive oil

1/2 tsp Dijon mustard

1/4 tsp salt

1/4 tsp pepper

1 cup torn arugula leaves

1 cup shredded radicchio leaves

1 cup torn watercress

1 head Belgian endive

1 small red onion thinly sliced

  1. Prepare dressing.
  2. Combine greens and endive.
  3. Toss with dressing.
