Sonia’s Zucchini Bread

My daughter’s darling friend, Sonia, sent this delicous recipe for zucchini bread. I can’t wait to try it when the zucchini in my garden gets out of control! Get ready Sonia, I’ll be sending zucchini your way.

Serves 12

2 cups zucchini, shredded (1 cup)
3 large egg
1 ¾ cups sugar
2 cups flour
¼ teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons vanilla
1 cup walnuts, chopped
½ cups raisins, optional
Put zucchini in strainer and press or squeeze with hands to get excess liquid out. Beat eggs, sugar and oil together. Add flour, baking powder, baking soda, cinnamon, salt, vanilla, walnuts and raisins. Mix together. Add drained zucchini. Mix well. Pour into 2 greased and floured loaf pans. Bake 1 hour at 350 degrees.
