Mediterranean Chopped Salad

Mediterranean SaladI love this colorful salad. Light and pretty to look at, who could resist? I added 1/2 cup fat free feta cheese to add some tang, and reduced the olive oil 10 1 tbs to reduce the fat. You couldn’t tell the difference. This nutrition information provided doesn’t include the feta, or the reduced amount of fat.

Recipe from Eating Well

Serves 4

2 medium tomatoes seeded and diced

1 cup diced seedless cucumber

1/4 cup scallions chopped

1/4 cup coarsley chopped fresh parsley

1/2 cup chopped yellow or orange bell pepper

1/4 cup Kalamata olives pitted and coarsely chopped

1/2 tsp dried oregano

2 tbs olive oil

1 tbs white wine vinegar

salt and pepper to taste

  1. Combine tomatoes, cucumber, scallions, parsley, olives, oil, and vinegar.
  2. Add feta if you choose and season with salt and pepper.
