Sage and Dijon Chicken Breasts

This chicken was so easy to make, and the fresh sage just takes a simple chicken breast over the top. The chicken was moist and tender. I served this chicken with Wild Rice Cakes and Mediterranean Chopped Salad. Lean meat, whole grains and a light salad. Who could ask for more?

½ cup Italian Bread Crumbs
1 tablespoons fresh sage, finely chopped
2 tablespoons dijon mustard
1 tablespoon water
4 tablespoons flour
2 ea chicken breast

  1. Heat oven to 350.
  2. Combine sage and Italian bread crumbs in one pan.
  3. Combine Dijon mustard and water in another pan.
  4. Put flour in another pan.
  5. Halve chicken breasts and pound to flatten for even cooking.
  6. Dredge chicken breast in flour.
  7. Using basting brush, brush chicken with Dijon mustard.
  8. Press into bread crumbs.
  9. Spray non-stick skillet with cooking spray and brown chicken on both sides, cooking 3-4 minutes per side over medium heat.
  10. Finish in oven for 15-20 minutes, or until chicken is cooked through.
