Apple, Oatmeal and Coconut Muffins

apple muffinsMuffins are ideal for a quick breakfast, or light snack with a cup of tea. High in fiber with crunchy apple, oatmeal and whole wheat, these muffins are a dieter’s dream. Just be sure to chop the apples small enough to cook through in a muffin. I didn’t bother peeling them, which was a real time saver.
