Aunt Mary’s Weight Watchers Chili

Aunt Mary is my mother’s aunt. She and my mother  just recently reunited after many, many years. It is truly an amazing story. She knew my mother when she was just a little girl, then the families drifted apart as people went their different ways. My family is really enjoying getting to know her. Aunt Mary is a Weight Watchers fan, just like me! She submitted one of my favorite weight friendly meals, chili.

15 one cup servings

Ingredients
1  small onion
1 cup celery
2 cans canned diced tomato
1 medium bell pepper
1 medium zucchini
1 medium yellow squash
2 cups black beans
1 package chili seasoning
1 can low sodium beef broth
1/2 pound ground turkey lean

Method
Brown turkey and onion in pan sprayed with Pam. Add the remaining ingredients (don’t drain the beans..the juice adds flavor) and cook for 30-40 minutes or until vegtables are tender.
