Romaine Salad with Blue Cheese Vinaigrette

I love blue cheese. This salad is wonderful with a good steak. Steak and blue cheese just seem to go so perfectly together. It’s one of my favorite “treat” meals. Add some garlic bread (my local grocery store sells whole wheat french bread I drizzle with olive oil and rub with garlic).

Serves 2 large servings

2 hearts romaine, chopped

1 clove garlic, chopped

1/2 tsp dried oregano

2 tsp sugar

2 tbs red wine vinegar

1/4 cup extra-virgin oliveoil

1/4 lb blue cheese crumbles

Place lettuce in a big bowl. Combine garlic, oregano, sugar and vinegar in a small bowl. Add oil to dressing in a slow stream and mix with a whisk or fork. Stir in blue cheese. Pour dressing over sald and toss. Season with salt and pepepr to taste.
