I know this isn’t an original idea, but I have to add it. This works really well if you have a leftover roasted chicken. Simply shred up the chicken (don’t forget to boil the carcass for a great chicken broth!), saute any sliced red, green, yellow, orange bell peppers and sliced onion you have on hand. Add the chicken and some chili seasoning, cumin, cayenne, whatever suits your taste.
You can purchase some really good high fiber, low fat tortilla shells at the store. Fill one with your chicken mixture. If you have a lime, add some lime juice, a small amount of chopped avocado, lettuce, fresh chopped tomato, and cilantro. Just to name a few ingredients you can add if you like.
