Summer Asparagus

I’m sure you could reduce the calories in this dish by using half the olive oil and fat free feta and it would still taste really good. I served this salad to company and the flavors really complimented each other, so I’m posting it under “Recipes Just Too Good to Pass Up.”

Serves 6

Ingredients

1    tbsp    balsamic vinegar
1    tbsp    red wine vinegar
2    tsp    dijon mustard
1/2    cup    olive oil
1    tsp    shallot — finely chopped
2    lbs    asparagus — trimmed
1    lbs    grape tomato
4    oz    feta cheese

Instructions

  1. Whisk together everything but asparagus, tomato and cheese.
  2. Steam asparagus til crisp tender.
  3. Arrange on plate with tomato and sprinkle with cheese.
  4. Drizzle dressing on top.
