Light Alfredo Sauce

This sauce is light, but full of flavor. I found this recipe on a website long ago, so I can’t recall the original source, but it really makes a great sauce for a quick weeknight pasta dinner. I add fresh basil, whole wheat pasta, leftover chicken. It’s also great with shrimp.

Serves 5


2    tsp    butter
2    tbsp    shallot — finely chopped
1    clove    garlic — crushed
1    Pint(s)    fat free half-and-half
3    tbsp    flour
1/2    cup    light sour cream
1/2    cup    parmesan cheese — grated
1/2    tsp    salt
1/8    tsp    pepper


  1. Melt butter over medium heat. Add shallot and garlic. Cook one minute.
  2. In bowl beat half and half and flour with whisk. Add to saucepan. Heat to boiling stirring frequently.
  3. Beat in sour cream and reduce heat. Cook til warmed then add cheese and serve.
