This sauce is light, but full of flavor. I found this recipe on a website long ago, so I can’t recall the original source, but it really makes a great sauce for a quick weeknight pasta dinner. I add fresh basil, whole wheat pasta, leftover chicken. It’s also great with shrimp.
2 tsp butter
2 tbsp shallot — finely chopped
1 clove garlic — crushed
1 Pint(s) fat free half-and-half
3 tbsp flour
1/2 cup light sour cream
1/2 cup parmesan cheese — grated
1/2 tsp salt
1/8 tsp pepper
- Melt butter over medium heat. Add shallot and garlic. Cook one minute.
- In bowl beat half and half and flour with whisk. Add to saucepan. Heat to boiling stirring frequently.
- Beat in sour cream and reduce heat. Cook til warmed then add cheese and serve.
