Lasagna with White Sauce

I made this for Christmas a few years ago. Boy was this recipe a hit! The pan was gone by the end of the meal. You can shake this recipe up any way you like by adding your favorite ingredients. I might add some roasted red pepper, or some fresh spinach to add some pretty colors to the dish.

Serves 8

1    lbs    Ground beef

1/2    pkg    mushroom — sliced
1    can    chopped tomato
1    med    onion — finely chopped
1    clove    garlic — minced
1/4    tsp    basil
1/4    tsp    oregano
3    tbsp    flour
2    tbsp    butter
1    tsp    dry mustard
1/4    tsp    nutmeg
2    cup    milk
salt and pepper
1/2    cup    mozzarella cheese — shredded
1/2    cup    parmesan cheese — shredded
1    pkg    lasagna noodle (quick cooking)

Meat Sauce
Fry the ground beef, bacon (optional) until browned and set asside. Fry onion, garlic, celery (optional) in olive oil for about 5 minutes. Add beef mix, tomatoes, oregano, and basil – let simmer until not too liquid or too dry.

White Sauce

Melt the butter, stir in the flour, mustard and seasonings – cook gently 2 minutes. Remove pan from the heat, stir in the milk and bring back to a boil. Stir until thickened and smooth. Check the seasoning.

In a shallow casserole, place one third of the meat sauce, cover with 1/3 of the whitesauce, followed by uncooked lasagna, make sure lasagna does not overlap. Then meat sauce, lasagna, top with white sauce and cheese. Bake until bubbling – 45 to 50 minutes at 350 – 375 degrees.
