Jordan Marsh’s Blueberry Muffins

I found this recipe in a cookbook years ago. These muffins turn out moist and really flavorful. If you top with sugar prior to baking they come out very pretty, with the blueberries and crusty muffin top.

Serves 12


8 tbs butter
1 cup sugar
1/2 tsp salt
2 large eggs
1 cup flour
1 cup whole wheat flour
2 tsp baking powder
1/2 c milk
1 pint blueberries

Combine butter, eggs, sugar and milk in a bowl. In another bowl combine remaining ingredients except blueberries.  Combine wet and dry ingredients. Fold in blueberries. Pour into muffin cups and sprinkle with sugar. Bake 375 for 25 minutes.
