Mint and Lime Glazed Salmon

This recipe stands out by combining mint, lemon and soy sauce for the marinade and glaze. I wouldn’t follow the advice to cook until it flakes. Always remember carryover cooking time. Originator of recipe unknown.

Serves 4


4    piece    salmon fillet
3    tbsp    mint — snipped
2    tbsp    soy sauce
1    tbsp    brown sugar
2    tsp    lime peel — finely shredded
2    tbsp    lime juice
1    tsp    olive oil
1/2    tsp    pepper
lime wedge


1. Thaw salmon, if frozen. In small bowl combine mint, soy sauce, brown sugar, lime peel, lime juice, oil, and pepper. Place salmon in a self-sealing plastic bag. Set in bowl; pour mint mixture over, turning to coat. Seal bag; marinate in the refrigerator for 2 hours, turning occasionally.

Drain salmon, reserving marinade. Measure thickness of salmon. Place salmon, skin side down, on unheated rack of broiler pan; tuck under any thin edges. Spoon reserved marinade over. Broil 4 inches from heat until fish flakes easily when tested with a fork. (Allow 4 to 6 minutes per 1/2-inch thickness. If fish is 1 inch or more thick, turn it over halfway through broiling.) Serve with lime wedges. Makes 4 servings.
