Garden Fresh Soup

I found this recipe (although I can’t say where now) in my early Weight Watchers days many years ago. I loved the tarragon in the recipe. This was such a light, refreshing soup. Lots of nutritious veggies. How can you go wrong?

Serves 4

Ingredients

4    ea    Small white onion — chopped
3    tbsp    Flour
2 ½    cup    Chicken broth
1    ea    Medium carrot — sliced diagonally
1 ½    tsp    Tarragon
1    tsp    Lemon Juice
¼    tsp    Pepper
½    cup    Broccoli — florets
½    cup    Mushrooms  — quartered
1    ea    Yellow or Green Squash — sliced 1/2″ thick
½    cup    Plain yogurt

Instructions

Saute onion in margarine. Transfer onion to plate and add flour to the pan to make a rue. You might need to add some chicken broth. Cook until thickened. Add broth, onions and carrots. Cook 10 minutes. Add remaining ingredients and cook til tender. Stir in yogurt last.
