Curried Chicken Salad

My friend, Phyllis, suggested we go to a tea house in Bothell. They had this wonderful salad that my mother and I adored. We spent some time attempting to create this culinary delight. This recipes comes close.

Serves 4


1    cup    Grapes — halved
1    can    Water Chestnuts
½    cup    Cashews
1    cup    Cooked Chicken Breast — small pieces

2    tbsp    Light Mayonaise
2    tbsp    Honey
1    tbsp    Lemon Juice
1    tbsp    Dijon Mustard
1    tsp    Curry
½    tsp    Salt


Combine dressing ingredients and toss with remaining ingredients. Serve on a lettuce leaf.
