Turkey Meatballs

This is a basic recipe for turkey meatballs. They come out moist and tender. If you wanted to lighten this recipe up even more, you could use ground turkey breast, however, I find ground turkey breast tends to come out a bit dry and tough. I served this recipe to my husband on a whole wheat sandwich roll, scooping out some of the breading to make room for the meatballs. We added his favorite barbecue sauce on the side.

This is such a basic recipe, that you could really have fun switching out the barbecue sauce for fat-free Italian dressing, or chopped thyme or rosemary. You could add a bit more garlic and ginger and top with your favorite sweet and sour sauce, and serve it with brown rice and steamed broccoli.

Serves 4

1 1/2 lbs ground turkey
2 tbs barbecue sauce
1/4 cup grated onion
1 clove garlic finely chopped or grated on a small grater
small pinch red pepper
1/8 tsp pepper
1/2 tsp salt
1/4 cup plain bread crumbs
1 egg white

Preheat oven to 350.

Combine all ingredients and form into golf ball sized balls. Spray non-stick skillet with cooking spray and brown on all sides.

Put in oven and bake and additional 15 to 20 minutes until cooked through. Do no overcook, as turkey can become dry.

Top with your favorite sauce.
