Chicken and Mushrooms

I can’t honestly say where this recipe came from, but we love the flavor of chicken and mushrooms. This recipe is wonderful with a simple side salad and whole wheat roll.

Recipe serves 4

2 tsp olive oil

3 tbs balsamic vinegar

2 tsp Dijon mustard

1 crushed garlic clove

4 ea 4oz chicken breasts sliced 1/47′ thick

2 c small mushrooms halved

1/3 c chicken broth

1/2 tsp dried thyme

Mix 2 tbs vinegar, mustard and garlic. Add chicken and turn to coat and let marinade for 15 minutes. Transfer chicken and marinade to skillet with I tsp olive oil. Saute til cooked. Transfer chicken to platter.
In skillet add remaining oil and saute mushrooms. Add broth, thyme and remaining vinegar. Cook til mushrooms are brown and sauce has reduced some.

Add back cooked chicken to mushroom sauce and warm through.
